Boar brats

Not exactly sure what recipe the butcher used making these brats from my daughters boar, but they’re dang tasty..the misses made them
In the cast iron with sautéed peppers and onions and a side of fried taters..And of course a cold Yuengling to wash it down. I wish we would have had a larger portion of the hog made into sausages of varying types.

Very true. I've tried my hand a DIY sausage making, and it usually turned out quite abysmal lol. There's definitely an art to it. Although wild hog isn't exactly a "good meat" for sausages because it lacks the fat content of domestic hogs, but the butcher had pork trimmings on hand and added enough of them to make up for the lack of natural fat content. Same with the breakfast sausage we have. A little bird told me that a lot of butchers use AC Leggs seasoning mixes.
