Ham? Hocks? How about Bacon?

Was a long day yesterday and it's going to be another late night tonight. Hams and hocks are done and mellowing in the fridge. Bacon is on now and should be done round about midnight. I'll have some finished pics of that later I guess.

Thanks Doc. Slaughtered the pigs last month so it was time to get these done for the year. Sausage is next month when I get a day. Dinner's at 6:30 but it's King Salmon off the grill. Sorry, I like to let the hams and such mellow a few days. I feel they taste better. Cmon over though, plenty of fish to go around!

Well, now, I just happen to enjoy salmon, and chinook is certainly at the top of the heap! Bon appetite (and I'm sure that will not be a problem).
 
And bacon. A couple long days and late nights but it's worth it in the end.

Man I am just getting back on the forum as I have been hunting for the last couple of months give or take a day here & there :lol: .
I am sitting here in my office just about to go for a bite to eat and I come upon this. Now I don't even want to look at a garden salad 8)!!
You can see there is a lot of work there but it must be very satisfying now that you are seeing the end!!

D21ALASKA Greetings from Namibia. I'm looking at converting a similar fridge into a smoker. Mind sharing some detail on the mechanism used to generate smoke. I've been leaning towards a gas burner for a warm smoke effect.
 
Welcome aboard, dehacked. Namibia, you say? That is some distance away from NA. After you get your smoker built, do post some pictures. I'm sure there are a number of people that will find it interesting. Again, welcome aboard.
 
Dehack, for smoke I use an Amazen Pellet Smoker. It's a nice little gadget that'll produce smoke for up to 11 hours. A quick Google search will bring up the website. I do also use a single propane burner for heat when I want it. I'm travelling at the moment but once I get back home I can upload a bunch more pics of the whole process/setup if you'd like.

Such a simple but effective device. Won't find it locally though but will try and fabricate something similar. Would appreciate some more photos of your setup if possible.
 
Man, that bacon looks awesome. I remember smoking our hogs in the fall when I was a kid.. Nothing like big thick bacon for breakfast and bacon roasts during the summer.

Breakfast for dinner doesn't get much better and putting it on the table yourself makes it taste that much better! Wow I'll be there about 6:00 PM!
