Fried rabbit cakes.

I described this a while ago when the discussion turned to cooking rabbits after I posted a couple I shot, and going through some of my cooking photos I seen these.

Rabbit meat that was cooked soft and browned, then deboned.



Then you take some left over mashed potatoes and some chopped up green peppers and a little chopped onion and mix it all together with some small pieces of rabbit meat and make them into sort of hamburg sized flat cakes. Season to your preference and fry them in oil until browned on both sides and hot all the way through.



Out of the pan and ready to eat. This really is some excellent eating. (y)

 
That looks like something that'd get in my mouth. Fine dining, without a doubt.
 
That looks very tasty. I ain’t had rabbit in years, but I really wanna try this.
