Pork Chops.

Even though it's loin, not my favorite cut of pork. As you know a much whiter and sometimes drier meat on a pig than shoulder cuts.

Wife brined these in water and salt with a touch of garlic. Browned and baked them in the oven in a cast iron skillet greased lightly with olive oil

Very good. Excellent flavor and good moisture content. Side dishes were beets we canned last yr, boiled cauliflower with butter, and cole slaw my wife made. Dessert was blueberry custard pie. My wife cheated on that one, bought it at a Mennonite bakery. Was good.
