you really cant go wrong with the Kimber rifles, essentially a Model 70 clone. What I do not like is the detachable mag and the molded in trigger guard on the Tupperware stock on that model. The weight does make the configuration attractive though, only 5lbs 12oz
If I was going after both with my 300 WSM on the same hunt I personally would us one of the 168gr Mono bullets. TSX, TTSX or E Tip or the ABLR. Just as stout and can be pushed faster therefore flatter for longer shots.

A max load of W760 has been my go too choice for the 300 WSM. I was an early adopter in 2001. My loads are slightly higher than Nosler's book max but that's what I can do in my rifle safely. The key is a full case, as close to 100% fill as you can get.
I used the 139 and 154 SST both in a 7 WSM with great effect on large Missouri whitetails. Most shots were inside 200 yds and they put them down with authority. IMR 4831 and 4350 were my preferred powders.
