I've never hunted Utah but I use a 200yd zero on everything that isn't a lever gun and if it's something I shoot a lot then it has a scope with a turret on it so I can dial for distance.
From my experience 243 and saving fur don't really go together. I would look at the Barnes, GMX or E-Tip.
I've killed them with the 55gr NBT, 70gr BlitzKing and 87 Vmax from my 243 and it looks like dynamite.
I have a 260 with DM, they do rattle more when empty. You can buy new DM bottom metal as sometimes the notches wear where people do not compress the tabs completely when dropping the mags.
You can not replace Remington DM with ADL/BDL bottom metal, once DM always DM.
I love my 260 with DM.
If you aren't measuring from the ogive that should you a more consistent reading. I have some 75gr HPBT match and the vary a lot from the tip, not so much off the ogive.
I made 257 brass out of 6mm brass and had trouble, split necks and early case head separation. After reading some it looks like people had better luck necking up to 7x57 and then making a false shoulder with their 257 dies to prevent stretching.
I wish I could take credit for the testing but I can't. The guy who did that testing did do an amazing amount of work though. I just look at it a lot, lol.
I have used the newer 180's from my 30/06 @ 2737fps and it's only a sample of 1 but I hit a nice buck 170-180lbs @ just over 100yds...
A lot of reading but you can see how they stack up here, older ballistic tip tested early, new one tested late.

Test:
I ordered 50lbs of cow leg bones from a butcher I know. All shots were through the joint (thickest part of the bone)...
Without pillars my Rem's liked 35/35 in/lbs
I just got a stock pillar bedded and tried at 65/65 inlbs, 50/50 inlbs and 40/40 inlbs. 40/40 was clearly the most accurate setting. A friend has a gun pillared and he is 65/65 with great accuracy, so like RidgeRunner said, let the rifle tell you.
I like 7mm's, especially 7RM's, wanna know why?
"My grandpa shoots a 7 Mag for our deerS around here. It's dead on at 100yds and it stays perfectly flat out to 500yds and then it drops 1" every 100yds past that to 1000yds."
Oh yeah, what kind of scope?
"A bushnell 6-18x50 in see through...
I bought a new concentricty gauge so I've been checking everything. lol
My friend just got some Redding FL .223 dies yesterday, I know it's a small sample, but they are awful. The expander stem was very crooked and if you didn't have about a pound of lube on a case it would stick. We worked...
He is actually a nurse.
The guy has never reloaded a single round in his life, Leupold, Ziess, etc = overrated, his Simmons and Tasco scopes are just as bright. See-thru rings are the bomb since you can see your sights, you know, just in case. His Rossi trifecta shoots 3/8" groups all day...
He must live near me.
Had one the other day tell me 30-30, 308, 30/06 and 300 mag were all different calibers, not chamberings but calibers, and that you could not load a bullet made for a 30/30 into a piece of 300 brass. They are not all .30 cals, they are infact .3030" cal, .308" cal...
A friend started reloading his 243 Win with Federal brass and in 2-3 loadings it was cooked. Primer pockets loose and splits at the shoulder/neck area. He switched to Rem brass and that was the only component change and he has great case life now.
That is my only dealing with Federal brass...
