Still, to this day, 25 yrs later I still kick myself in the back side for not buying a Ruger International 250 Savage I found in a pawn shop that was priced at $250. But, the wife (now Ex) would have gone off like a ballistic warhead.....:)
IMPO I don't think a 250gr is a solid option. I'm shooting 200-210's and see no reason to vary. Anything heavier cuts too much into case capacity & reduces velocity to a point where the heavier bullets construction becomes if it's going to be more of a solid than a expander.

I had to go to a shim on my Rem 600. Fixed the 'shooting too low' glitch w/o a hitch.
Just remember to shim the bottom of the front ring if you're shooting low, back ring if high.
What did I use? Just a strip of foil folded over a couple of times.

15 years as a unofficial assistant guide, and a personal total of over 40 whitetails, is that a deer shot in the heart will probably do a 100 yd dash at Max speed, a center long shot is a 50-50, high lung shot, just below the spine, DRT.....doesn't matter what cartridge it was.
Since you're in OR it's going to be a good hop to get to any 'hot spot' to poke some bacon. TX, FL, GA are really good for a short/put one (or 3) in the freezer. but I think the best bang for your hard earned $$ is Hawaii.

Here's something to consider. Why limit the rifle choices simply due to be a left handed shooter?
Allow me to elaborate. Most all right handed shooters remove their right hand to cycle a bolt, after a shot, and rifles are pretty much designed along that practice.

I'll just leave Y'All with this. Since the 1950's the Marines have had to qualify, every year, out to 500 yds, with a peep sighted rifle. Hunting conditions DO NOT equate to SHTF/Combat conditions. If you're not a Vet you'll probably not get it.
