I have an extra Bergara 7 PRC that I’m wanting to convert to a 375 Ruger. Everything I’ve read says it’s nothing more than a barrel swap. Was wondering if anyone has done it and if there’s any unforeseen issues that have come up. I appreciate any info.

Same parent case so I can't see why not. With the heavier recoil you might need to make sure that the bedding is up to snuff and if it's a wood stock maybe some cross bolts to make sure it doesn't split. The Ruger Hawkeye I had in 375 Ruger did shift in the wood stock, that's how I found that out. It may have to be tweaked in order to make it feed reliably but that' not too hard to get right.

I really appreciate the information. I’m thinking I’ll put it in a Grayboe stock and I should be good to go.

Might need to ask your gunsmith if the feed rails need to be opened up in the action to feed properly.

The 7PRC is based on a shortened 375 Ruger so as long as the mag box length is long enough it should just be a barrel swap.
