I would think the fit of the stock would be a greater matter for consideration than the calibre. Either will work just fine for deer and antelope, and each is capable of taking elk with reasonable care.
Either one is no slouch but I would opt for the 7x57. It can be loaded equivelant to the 7mm08 if it's a modern action. Tons of bullets available and a 120-140 ballistic tip would be hard to beat for deer. Load it with a 140-160 acubond or Partition and hunt elk.
The 270 has more get up and go but also more recoil.
Yeah, both of those two rounds are in the same category. One is not going to do an elk in any better than the other. The 270 has an edge in that there is more factory ammo available, but other than that, they are both great multi purpose rounds. Scotty

The question is are you going to reload?
If yes, I would lean towards the 7mm Mauser because of the many bullet options. A 150 gr PT would be about perfect for elk.
If you are going to use factory loads, than the 270 Win will give you more options.
I would definitely recommend the .270 because there are tons of rifle choice options available, and the 7X57 is barely in the market. I also recommend letting her choose the rifle she likes best.

The 270 gives you a lot more options because "EVERYBODY" makes them. The ammo is more varied and availible everywhere and she can use light magnum loads for elk if she so chooses. If you are going for short, availible and light the 7mm-08 is the answer. I have a Rem. model 7 and it's about as ideal for that as you can get.
