Anyone have any recipes for Axis Deer? I just got one last week down in Texas and was wondering if anyone has a must try recipe. I heard the meat is great.
 
Well when all else fails Jusmo, backup and try cookin it just like it was domestic beef. From there you can decide what to add for the next go round. :grin: I've never killed an Axis deer. but it should be perty tastey!

JusMO,

Congratulations in your Axis deer. Try pan fried with olive oil, crushed garlic and sliced onions. Sear in skillet with salt and pepper.
Should be pretty good. :wink:

How about a picture of the great white hunter and his trophy. :grin:

Jusmo, I make my axis teri style. Equal parts of shoyu/water/sugar. You want enough to cover the meat. Crushed garlic, crushed ginger, sliced green onions and chili perper flakes. One small jar of guava jam. Any jam will do. The jam will give it a light fruit taste and a gossy look when cooked on the grill.
Mix all the above together. More of less garlic and ginger to your taste.
Chlli peper to how hot you want it. I try to keep the meat the same size.
6" long/1" thick/3" wide. I feel that as long as the thickness is the same, your good. Soak for two or three days. After you can chill dry in the fridge for a day or right to the grill. If you have a dry box, one hour in the hot sun is good too. I smoke if I have the time or grill if I don't.

That sounds as if it would produce great meat from any game. I'll copy that one down and it will be used this spring and summer.
 
DrMike, I make teri sticks with the same. You slice the meat thin 1/8 to 1/4 when its still semi-frozen and thread them on the bamboo sticks. Don't pack them tight or the middle woun't cook. Soak in the same teri mix in a pan for a day. Grill, great snack.

I harvested this critter at about 270 yards with a NoslerCustom Model 48 7mm-08 and NoslerCustom Trophy Grade Ammunition loaded with a 140 grain AccuBond. He didn't even take a step.
 
Thanks. He measured 32" and I got a shoulder mount on him.

As for the steaks, I'm already drooling just reading russ and JD's recipes.

It did and I have to say that is some really good meat. I haven't had much of a chance to try any recipes yet but just grilling it with the standard monterrey steak seasoning is amazing. It's the best deer I have ever had. Your teriyaki recipe is next on my list.
 
JusMo, I knew you would like it. We just had our state hunt. four of us went and we got 3 does and a buck. Meats in the freezer for a month or so, before I eat it.
