Guinness and Bambi Chili:
- 2 teaspoons Olive oil
- 2 med. Onions, chopped
- 3-4 cloves of Garlic (minced)
- 1lb (min) ground Deer/Moose/Elk
- ¾ lb(min) Deer/Moose/Elk steak – cut into small cubes
Cook Onions, Garlic and Meat until brown, then add:
- 1 can of Guinness Beer
- 1 cup of strong Coffee
- 2 6oz cans of Tomato Paste
- 1 can Beef Broth (I prefer low sodium if possible)
- 1 14 ½ oz can of Diced Tomatoes
Stir, then add:
- ½ cup Brown Sugar
- 3 ½ tablespoons Chili Sauce
- 1 tablespoon Cumin
- 1 tablespoon Cocoa
- 1 teaspoon Oregano
- 1 teaspoon of Cayenne (add more if you like it hotter)
- 1 teaspoon Coriander
- 4 14 oz cans of Brown Beans in tomato sauce
- 1 can Chili style Kidney & Pinto Beans (Heinz)
- 4 Jalapeño Peppers chopped small
- 3 10oz cans of sliced mushrooms (drained)
Simmer on low for 1 ½ hours (or at least the first half of a Football game)
