I am no expert but I don't think so. The big thing with turkey is movement, or lack there of. Some of my shotguns are camo and some are matte, never had a problem with birds seeing either. Now if you move it doesn't matter, they are going to see you.
I have two 870s. Both are matte finished. One has a wood stock and one has a black plastic stock. My thought is that if the bird is close enough to see the guns finish then he is too close and I should be pulling the trigger. I don't think it matters. As they walk in all they should see is a 12ga black hole looking at them.
