duck kabobs

My wife wasn't all that excited about me bringing home six ducks the other day - not all that fond of duck it seems. So... I tried something new! Duck kabobs...

cut the duck breast meat into rough cubes, put in a vinegar & olive oil marinade with a few spices thrown in, and let the whole thing sit in the fridge overnight, about 24 hours

put together a bunch of sticks, alternating onion slices, duck cubes, apple chunks, pineapple, and green & red pepper slices, then dribbled some more marinade on the whole thing

Fired up the Weber kettle and let the charcoal burn down a bit, then put the sticks on the grill, turning them once at about 8 minutes. At 15 minutes I pulled them off the fire and a few minutes later EVERYBODY, even my wife, was happily eating the duck kabobs. She'd made some nice wild rice to go along with the kabobs. I even got the go-ahead to bring home some more ducks and do it again! :grin:
 
Good show, Guy. Always a good thing to win over the wife. Wow, this may require a new saying, "The way to a woman's heart is 'duck kabobs'?"

We Greeks usually use lamb but I can live with duck!

Laughin' at all you guys! That's great, and yes, the kabobs were terrific.

I've done the same with elk & venison. Ummmmm gooood! :grin:

My wife would just be happy that I cooked dinner - I could call it duck on a stick and she'd be estatic.

Oh wait - we are talking duck here?

Guy, not sure what ever possesed you to give it a try that way, but that doesn't sound half bad at all.
This food & recipies forum is turning out real well !
 
Well, I've done a lot of deer, and some elk over the years that way - always have.

Then I stole a good idea when I saw & tasted it. When I was snacking on duck kabobs, hot off the grill, still in the duck blind.... I was sold!
