Gills

I got out yesterday and had to work my tail off to get the big ones to bite but ended up with an nice meal of fish. Here are the biggest gills. 8 1/2"-9 3/8".

I would agree that they taste like perch. They are firmer than a crappie though.

As fine eating fish as one could imagine; and one of the scrappiest fighters you'll ever catch.
