Got this from an old friend who smoked a lot of fish. I have not used this recipe myself, but have eaten the fish he has smoked, and they are to die for! WOW, this is good :!: :!:
1-cup Canning Salt
1-cup Brown Sugar
2-tablespoons Black Pepper
1-tablespoon Lemon Pepper
2-teaspoons of Garlic powder
1/4-teaspoon of Onion powder
4-Bay leaves crushed
2-quarts of water
Fresh fish let soak in brine for 6 hours, frozen fish that have been thawed 3-4 hours. Use a plastic bucket or something to soak the meat in. Metal will react and cause a bad taste.
After the meat is done smoking, take out and pat the meat dry then let stand for an hour or so.
