The wife loves the shrimp with curry dip at the melting pot, we came up with a home version that ended up being mighty damn tasty.
The boil:
- 8 cups chicken bouillon reduced to 6
- 1/4 OJ
- Hefty squeeze of fresh lime
- 1/4 cup of diced cilantro
- 2-4 cloves of garlic diced
We used about 1 1/2 pounds of shelled raw shrimp for the two of us with some leftovers. The shrimp just takes a few (2-4) to be cooked through.
The dipping sauce:
1/2 cup yogurt
1/4 cup mayo
1 tbl Curry powder
splash of lemon juice
We just dumped all the shrimp into a big bowl and dove in. Lovely light meal.
