I thought everyone would like a great recipe for Turkey Enchiladas.
Better than the traditional left over turkey sandwich.
Chicken or Turkey Enchiladas
2 cups cooked chopped chicken or turkey
1 four oz. Chopped Mile Green Chilies
1 seven oz. Bottle of green chile salsa
1-1/2 teaspoon salt
2 cups or 1 pint heavy whipping cream
12 floured tortillas
1-1/2 cups grated taco cheese
Preheat oven 350
Combine chicken, green chilies and salsa, mix well
Mix salt and whip cream in a medium bowl
Microwave tortillas 40 seconds
Put chicken mixture in tortillas roll seam side down in pan
Pour cream over tortillas evenly sprinkle with cheese
Bake uncovered at 350 for 20 to 25 minutes
