It would be no problem to get 3k fps in a 45 caliber.
I have shot the 250 grain over 2900 and add a 30 grain sabot it gets near the point you want a brake. A 14 pound rifle makes it not too bad, but a dedicated rifle for a 300 grainer might need to revisit the drawing board!

PS I shoot the 200 grain 8 mm Custom Comp at about 3100 fps which is supersonic at 1k.
 
I am thinking most of the problem is the sabot. 0*F is pretty cold on polymers and it may be the root cause of your low temp issues.

I can tell you that my 338 RUM shoots the 250 gr AB at 3000 fps. The rifle weighs 8.75 lbs and recoil is "brisk". :mrgreen:

You may be 100% right.

If you are right then no bullet will work, and that is why I need to know what the minimum twist would be!
IMO zero is not low from a polymer standpoint. I could switch to delrin but it has not been as accurate for me.
