Veggies to Accompany Chicken Fried Moose (or Venison)

Mama is away, which normally means that I eat a cardiologist's nightmare. For as long as she is gone it is red meat (often fried, though occasionally grilled) and lots of sauces. I do, however, try to be somewhat conscientious about eating a few vegetables. Tonight, I tried a new recipe that turned out quite good.

My vegetable dish consisted of steamed asparagus accompanied by savory sauteed vegetables. I sauteed a jalapeno, an anaheim and a yellow banana pepper (all seeded and coarsely chopped) in butter and extra virgin olive oil, together with a thinly sliced medium sized white onion. I added a pinch of kosher salt and some fresh ground pepper, which would prove to be just the right mix of condiments. When these veggies were just translucent, I added a few cloves of chopped garlic, some cilantro coarsely chopped and enough fresh dill to give a spectacular flavour. This savory saute was spooned over the asparagus which was just steamed to the point of threatening to cease being crisp. I considered some grated Romano for the veggies, but in the end opted to restrain my adventuresome spirit and try them sans cheese. I'm glad I opted for the simpler dish. I believe this will be a hit with mama when she gets back from Kansas. Now, I can eat my chicken fried moose without feeling guilty, because I get my veggies as well.

Have you had any of that summer soup you posted last year? We grow very few summer squash this far north, but they are available intermittently in the stores. I picked up a couple of zucchini this afternoon. However, there were no crooked neck squash. Neither do I have any kielbasa, but I do have some chipotle sausage which I may try to substitute. It is on my "to try" list while mama is away.

It was surprisingly tasty. I have a few more asparagus spears which I think I'll grill tomorrow after church to go with a nice rib eye steak from last fall's moose. If I add a purple onion and an ear of corn, it will be a feast fit for a king.
 
It is still a little early here for some of the veggies out of the garden. I imagine maybe a week or so and I'll have everything (except the meat) to take out of the garden. I would thing almost any smoked type sausage, cut into small pieces, would work well.

Now my mouth is watering for it....
