Dr Mike you sound a lot like my Dad. He turns 80 this year and still gets out and about. There is a stubbornness in him too which I would call life enhancing. Plenty of people at 80 are just breathing not living. Here’s to wonderful past times and adventures that keep us looking forward.

I have had really good success with the 139sst in my 7mm08 both in terms of accuracy and in the field. There has only been once where I was a little "concerned" and that was a shot on a fallow doe at maybe 30 yards that hit the shoulder blade and blew up/fragmented causing enormous damage...

I'm suspecting the accuracy node will be somewhere around 2,900-2,950fps. That is where my old 280rem used to sit, with the Ackley version in those numbers you're seeking to achieve. Really looking forward to hearing how it goes, you have powders there I never tried before.

...and if you feel like the ballistic might not be quite enough, generally a perfect swap to the accubond. 180 grains out of a 300wm goes pretty good on most things too.
120 grain ballistic tip out of my 260 has never let me down. I tinker with the idea of changing to something else and then think “why?” Just need them in boxes of 100 or 250 🤔
