I just talked to MR on the phone a bit ago. Very helpful gentleman who was very patient and answered my questions in detail.

I only used three 5# plates and one 2.5# plate at the top of the wood pellets.
The pack is really filled out by the pellets, so the small plates fit in snug at the top.

So I had some leftovers from backstraps I grilled, and these always linger and never get fully consumed because my family hates leftovers.
So tonight I sliced them up thin and made "mongolian beef" with them.
I now know how to make sure the leftovers from steak night don't go to waste...
