Confit De Canard / Canned Duck drumsticks

Here`s a recipe for the french treat "Confit De Canard", in Norwegian, I`ll translate. The recipe is for bred ducks, whitch are larger than wild ducks. So when the recipe says four , You could use at least eight drumsticks from wild ducks.
I apologize for the "liters" and "celcius", could easily be recalculated.

You should try it, makes those unchewable Duck drumsticks delicious :grin:

4 (8?) Duck drumsticks
Coarse salt
1 big carrot in thick slices
1 big onion cut in boats
10 whole black peppers
2 - 3 leaves of laurel
4 boats of garlic
1 - 1 1/2 liters of olive oil

Put the drumsticks in the salt for 1 hour. Then wipe them clean from the salt.
Put drumsticks and other ingredients in a hotproof dish, and cover with olive oil.
Cook in oven at 120 `celcius for 3 hours. The drumsticks are then "canned".

According to the recipe the drumsticks could be kept in the refrigerator for up to two weeks, as long as they are covered in the olive oil.

Take the drumsticks out of the oil and fry them crispy on a hot pan, and You`re ready for some tasty drumsticks !!!
