Any idea what/if there is any difference between Federal 210 Large Rifle primers (in the Red box) and Federal Champion Large Rifle (in the blue/silver box)?

The Champion primers are the standard line. The red/gold boxes are the Premium Match line. The primers are the same, except for the level of QC, as I understand.

Oops, if you mean the old red box standard primers and the newer Champion packaging, they should be the same.

Federal 210 are large rifle primers and 210M are benchrest large rifle primers the M is for match. The 215 are federals large rifle magnum primers. They are always changing the aperance of packaging for marketing.

Now other manufactures may use M to designate magnum so be mindful.
