Meat Loaf

Tried a new meatloaf recipe this evening. It was a hit.

About a pound of ground bison. Fried up ten slices of bacon and crumbled it together with about 250 grams of aged cheddar. Added two large eggs, 1/4 cup of bread crumbs, 1/4 cup of mayo, a generous splash of Worcestershire sauce and salt and pepper. All this was mixed thoroughly and placed in a loaf pan.

I topped the loaf with a mix of ketchup, dijon mustard and chipotle Tabasco sauce with brown sugar to make a thick topping, which was drizzled over the loaf.

Placed in a 350 degree oven for about 40 minutes. Topped with french fried onion rings and more of the sauce before returning to the over for an additional twenty minutes after upping the temperature to 375.

Served with baked potato and asparagus garnished with grated cheddar and french fried onion rings.

I'm a hero this evening.

That sounds good!

Since I am fresh out of Bison, guess I will have to use venison burger. :evil:

I would think that venison would work just fine. I just happened to grab bison first, and so that is what I went with.

I will use a bigger splash of chipotle Tabasco the next time around, however.

I didn't know you were a cook. Congrats and I will be watching for your recipes. I might even throw in a few of my own. I hold a couple of trophys for wild boar an venison chili!

I try to cook a couple of nights each week. My wife works as an office manager and I work out of my home office. Since I am home, I don't mind cooking. Besides, it gives me opportunity to ensure that I get plenty of protein. I will post a few more recipes I've tried in the near future. This particular recipe turned out to be quite tasty. I'll post my recipe for three alarm bear chili one day soon. Having fresh bear will help stimulate me to do so.
 
Unless they are harvested off standing oats. Oat fed bear is very tasty.
