Tried something a little different last night. Took 3 pounds of elk burger, mixed with 1 package of regular jimmy dean sausage. Diced half of a green and half orange bell pepper. Diced up some sweet onion and mixed it all together with an egg and some panko and a bit of some of my favorite dry rub and formed into a loaf. Placed it into a disposable aluminum roasting pan with holes in it to drain the fat and placed it on the Traeger smoker at 225 with a blend of hickory & mesquite wood and smoked for 2 hours. Then raised the heat to 325 to finish it up for an hour. Sauced the top with sweet baby rays the last 15 minutes.
It turned out really good! Even my almost 2 year old devoured a piece and was asking for more! It's making for a darn fine sandwich for lunch today too.... :grin:
