Jim, I didn't want to list the moose meat you gave us as being "mundane". It was special and we really enjoyed it. But, at that time, I hadn't yet learned how to grill it like I have learned to grill the elk. If I had learned how to do it then, it might have made the top of the list...Dan, you forgot to mention Moose.

Jim, Wood ducks are outstanding.I've had WT, Mule deer, Caribou, Elk, Antelope, Moose, Wild Boar, Mountain Lion, Turkey, Duck, Partridge, Woodcock, Rabbit, Squirrel, Beaver and Raccoon.
My favorites are Moose, Elk and Caribou. Wood ducks and pretty dang good too.

I have the same cook book!I grew up in Iowa and my Mothers Pheasant & Dumplings is hard to beat ! What I have learned is one needs to Try Several recipes to find what one likes just like Deer Summer Sausage, some is Outstanding and some is just ok at best.
