Not sure about scope choice yet. Any suggestions? I have a 4.5-14 Leupold with the B&C reticle. Still pondering what dies to get.

The VX-3 4.5-14 B&C scope would be just about perfect on your 338-378 Wby.
I have a Mark 4 4.5-14x40mm on my 338 RUM. Its a versatile power range for a fast 338.

I went with Redding deluxe set as I have with all my calibers as I have a T7 Turret press and like it a lot! Hunting out West I prefer at least a 20x as 5 to 600 yard shots can be had easily, does not look that far but once the range finder stops shaking and it gives you a distance it's decision time :) I went with a Mark 4 6.5-20x50 and it really works nice with M1 dials and I have it sighted in at 100 yds and I just dial in my MOA for my yardage which I have taped to my stock!
 
What that chart tells you is how much travel you have from a 100yd zero in MOA. It also tells you that the clicks aren't exact MOA adjustment. It took 8 MOA worth of clicks to go 7.5 MOA and 15 1/2 MOA worth of clicks to go a true 15 MOA. So your clicks are probably closer to 1/4" rather than 1/4 MOA. It's like any other scope and you need to shoot the distance to find the real click values for drop instead of going off a ballistic program.

I still have dies and brass from the one I built 15+ years ago as well. I have no clue what the loads I shot in mine though. I was shooting 300gr Sierra SMK's when they first came out.

Appreciate the translation of the work sheet that my gunsmith did on my scope when he installed it and understand it much better now and it does help greatly guys! :)
