2lbs roast (venison)
3 table spoons heaping minced garlic
one large onion chopped small 1/4 inch pieces
one pineapple cored and chopped
three large ripe tomatoes
three minced jalapeños seed and all
salt
pepper
juice of two large ripe limes
one cup orange juice
cumin ground
cilantro one bunch minced
4 tlb spoons oil
1/4 cup coke

meat needs to chopped into small pieces


this dish needs to boil off all juices and concentrate up
I like to put everything except oil in large bowl in fridge for a couple of hours in the morning.

dump contents in large frying pan. on high heat until liquid starts to boil off.

add oil and cook on low heat for several hours adding water when needed.

serve just like tacos, beans and rice really make it shine
 
Yellow dog, that sounds like it would be very tasty with almost any type of wild game :). I know that my wife is going to be trying this recipe out!!

I will tell you this is good. wife usually makes about 10 lbs worth of meat.

beans and rice and company always leaves the bowl clean.
 
I use almost the identical recipe but its call Carne Guisada, it is one of my favorites..I also make Carne Colorado, and its highly spiced cubes of meat in a red enchilada type sauce..I am ranch raised on the Texas Southwest Mexico border, I eat a lot of Mexican food, its my staple diet..
 
Me and Carne Guisada are on a first name basis. I judge a mexican food restaurant by their guisada. Ray could you share that Carne Colorado recipe? What is it's SF. (sweat factor).
