I have been cruising my cook books for anything new that is easy to try and uses ingredients that I can get without trouble. I saw Ratatouille and thought, why not? My mom has never cooked with eggplant before so she was surprised when I pulled it out and started chopping it up. Both her and my kid siblings who got to sample it were quite amused by the dishes relationship to the Pixar cartoon. Mine is the "peasant dish" that you see in Ego's flashback to being a kid, not Remmy's fancy one. I'll probably cut the zuchinni smaller next time, but it was actually better tasting than I expected for how simple it is to make. All the different vegetables kind of season each other creating a pretty good flavor combination. I'm trying to figure out what would be a good accompaniment for Ratatouille for the next time I make it.

I'll add the recipe when I get the chance, it's really easy to make.
 
Interesting. I might give that a shot sometime. Hated eggplant as a youth, but now I find it quite palatable.
 
The wife was intrigued by the movie and looked up the recipe for Ratatouille and makes it on occasions for a change of pace.
Being meat and potatoes type a meatless meal is something one has to get used to.
 

Ratatouille​


Ingredients​

  • 1 Eggplants medium unpeeled (1 1/2 lbs.)
  • 2 Zucchini small (1/2 lb.), cut into 1/2 in. slices
  • 1 Bell Peppers medium green, chopped (1 cup)
  • 1 Onions medium, finely chopped (1/2 cup)
  • 2 Tomatoes medium, cut into fourths
  • 0.25 Cups Olive Oil
  • 1.5 Teaspoons Salt
  • 0.25 Teaspoons Pepper
  • 2 Garlic Cloves finely chopped, or season with granulated garlic

Steps​

    Cook all ingredients in a 12 in. skillet over medium heat 10-15 minutes, stirring occasionally, until zucchini is tender.
NOTES: Try cutting zucchini into half inch cubes instead of slices for faster, more even cooking.
 
Here is the recipe. Some of the formatting is just a little weird because I make these in an app my brother set up to store the recipes on the computer.
