Bear Meat Loaf

Talking about bear, and seeing the comments from those in the know, has stimulated me to dig out a few of my recipes for bear. One favourite is Bear Meat Loaf. If you do this right, it has a bite. I took it to a game dinner we sponsor each year at the church I pastor. Everyone was informed what the dish was, and it was great fun watching people that "would never eat bear" going back for seconds and thirds until all three meat loafs were gone. I didn't even have any to bring home for lunch the next day.

You will need:

2 eggs
2/3 c milk
2 tsp salt
1/4 tsp cayenne pepper
1 1/2 c bread crumbs
1 onion chopped
several fresh jalapeno peppers, chopped
(The more jalapenos, the warmer it can be. For a real kick, try serrano peppers.)
1 1/2 lb of ground bear

Combine all ingredients except the ground bear until the bread disintegrates. Add the ground bear to the mixture and bake in a load pan at 350 for 1 hour.

For a topping, I use:

1/4 c ketchup
1/4 c brown sugar
1 tbsp prepared mustard

Combine and cover the meat mixture before baking. Make extra topping and heat it in the oven with the meat loaf, as it is really good to spoon a little extra over the meat loaf.
