Game Burgers

There are not many things that are more american than hunting and grilling burgers! Figured I'd share my way of the grilling part.

I like to mix one pack of deer with one pack of beef, or just use two packs of elk. I add in two eggs, a handfull of saltine crackers, some steak seasoning, some whistureshire sause (you try and spell it without looking at the bottle!), and the final thing that I add in is about a half a cup of BBQ sauce. Mix tham all togeather and let it sit for a while in the fridge.

When it comes time to cook them smoke them for 20 minutes then turn the heat up. If you are using a gas grill I'm not sure how you would smoke them, but a charcoal grill does a great job. Just soak some hickory, or whatever type of wood you want to use for a few hours in some water then throw them on when the charcoal is ready.

Best shared on a sunday afternoon with some buddies and a cold brew.

Its spelled worcestershire I looked on the bottle but that sounds good my wife does something similer and you always have to have a cold one when you got the grill going :grin:

I don't know what you are using for mix with your elk and deer burger grind, if its beef fat or what, but here's another trick a butcher friend and others told me.

I've made burger out of the scrap meat on deer, elk, antelope, and if I happen to have say a deer and an antelope hanging together at the same time, I just mix the meat from the two together, same with an elk.

I cut my grind pieces into chunks small enough that my grinder (not a large commercial one unfortunately) will handle. Now try this for your fat mix. Instead of using beef, buy the largest, fattiest, cheapest pork butt roasts you can find. Chunk them up so they fit in the grinder with the game meat. I throw a few pieces of game in and a few pieces of domestic mix in and alternate until I have it all ground up. AFter it is ground and in my clean meat bucket that I ONLY use for meat cutting, I mix it by hand and then run it through the grinder one more time. Some folks use the wild-game burger for making tacos or some other similar dish. Made this way, you will love them cooked just as you would a regular beef burger!

One more trick that works pretty good. I make some of this type of burger, but my wife doesn't care for bacon burgers. Make some burger just as I have described, but a few pounds of this in with it. Buy some really cheap, fatty, SMOKY FLAVORED, bacon ends and pieces. Grind them up in with the wild-game and the pork butt. Cook those over the grill and you have a smoky flavored bacon burger!

I put my 1 to 1 1/3 pound packages of burger in a simple two quart plastic freezer bag and try and get all the air out and spin the plastic and fold it over itself. I then wrap it in Freezer wrap paper. Try this and let me know how you like it!! :grin: :shock:

I usually go to safeway and get some pork fat to mix in with my game. I try to keep it under a 10% fat mix.

I Love burgers! They are so easy to change up. I've made them with blue cheese in them, onions diced in the burger or carmelized on top. Bacon, mushrooms, hot peppers, ham, salsa, a guy can do about anything he can think up with a burger. And it is a great way to use up some of the lower quality cuts off an animal.
 
I buy the biggest fattiest beef briskets I can find on sale at walmart throughout the year and grind 50-50 deer-brisket. Course grind the first round and medium grind a second time through. Outstanding mix, tastes great.
