Mama made venison chili

Sounds good, Guy. We had moose burgers last evening, but I had prepared whitetail sirloins for dinner last Friday. I do enjoy it. I was asked by a couple of people at church last Sunday evening if I kept much wild game in my freezer. I commented that I kept a little. You'll have to give us Mama's recipe for chili. We make two chilis here: false alarm chili for Canadians and three-alarm for me.
 
Hi Guy & Mike, I really enjoy chili and would appreciate the recipes from both of you :).
Mike I am not sure if I can handle 3 alarm but would like to give it a try :wink:

Three alarm chili is simple to make, Dan. Cube your meat (traditionally, the brisket or other less desirable cuts). Brown in olive oil (concession to modern sensibilities) in a dutch over with perhaps an onion finely diced. Add enough water to cover the meat. Add salt and cumin to taste (and possibly oregano if you enjoy the flavour of oregano). A dash of cinnamon can make an exotic flavour, as does the addition of a small amount of cacao powder. Simmer (leave the pot on the back of the stove). While simmering, add whole chilis until it is the right colour of red. It is best after sealing in the flavour by setting overnight in the fridge. It will clear eighteen sinuses medical science has yet to discover. There are actually people who adulterate chili by adding beans (my wife, among others). However, chili con carne requires no beans. If you want a bowl of beans, spoon them out on the side. False alarm adds pureed tomatoes (yuck) with fewer dried or fresh chili peppers.
 
I love to cook chili, competed the last five years in the Nebraska State Chili Cook Off......even won a ribbon or two!

It was traditionally servered over angel hair speg................. it is always a crowd pleaser at the Lodge but it amazes me how many folks have never tryed it????

I haven't tried it, but maybe I need to come up and have you cook it up buddy! :grin:

Anything is a good excuse to get up to Northern Maine!

I will have Patty whip you up some Cincinnati Chili ..... I think someone said it is complimented nicely with amber fluid ????
Dont even think of anything else but the Whelen, and if you forget your ammo and can shoot 58grs instead of that stout 60gr favorite blend of yours , I got ya covered!

Well, I submitted Earle. We shall see what comes out of it buddy. Your right, it would be the Whelen up front for that trip.

Probably bring the old beat up Pre 64 Alaskan as a back up though!
 
I gotta imagine the way you shoot Scotty that a "backup" isnt in order. If you want to save sackin yours clear up here my Ruger is always ready to go with that new Leupold VX-2 with the heavy German #4 reticule.

The only thing I plan on lugging around is a 2lb Hudson Bay axe !
There are some old smashers still left here, and I am sure we can call up one, that will get even you, breathin heavy!

That sounds like a great hunt Earle. I told my wife, if I don't start now, I might never get it.. I would love to hunt up in Maine. It was a childhood vacation spot when I was young. Love that big country up there.
