Ingredients you will need:
2 small overripe bananas
3 eggs
1/4 cup canned coconut milk
1/2 teaspoon of pure vanilla extract
2 tablespoons of pure maple syrup or honey
1/2 cup + 2 tablespoons of coconut flour
2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
Pinch of cinnamon
2/3 cup blueberries
Preheat oven to 350
In a small bowl, mix all of the dry ingredients together, flour, the baking soda and baking powder, cinnamon and the pinch of salt.
In larger mixing bowl, smash two overripe bananas with a fork and eggs, coconut milk, pure vanilla extract, and pure maple syrup or honey Whisk and slowly add the dry ingredients until they are fully combined. The batter will be thicker due to the coconut flour.
Fold the blueberries into the mix, a few at a time.
Spoon into greased pan and bake 45-60 minutes. Let bread cool fully.
