Prime Rib Sandwiches

So... What to do with a couple of slices of Christmas Prime Rib?

Make sandwiches of course!



Diced up a Walla Walla sweet onion, cut up some sweet peppers and some mushrooms. Cooked them all in olive oil with a little garlic powder and a dash of Lee & Perrins.

Diced, then browned the left over prime rib...

Put all that on a couple of rolls covered with melted pepper jack cheese...

Looks like you created the Philly Prim rib steak and and cheese. Great looking sandwich, bet it taste good too.
I would add some chopped lettuce, chopped tomato and mayo on the roll, salt and pepper to taste. Man it's killing me just thinking about it. :mrgreen:
