What kind of a reference do you guys use when seating bullets without a cannalure? I just used my best judgement..............

Also, what caliber generally stops using small rifle primers and then up to large rifle primers?

Use a set if calipers to set your COL. This will provide you with more consistent ammunition and accuracy.

Small rifle primers are used in 222,223 class cartridges. Large rifle primers are used in 22-250, 308, 30-06 class cartridges.
