had a butcher 10+ years ago that would take a hind quarter on a deer, cut it into strips and then smoke it.
made an excellent moist/lean jerkey and I liked it a lot better than the stuff I make using ground meats with a jerkey gun.
any of you make your own jerkey strips and then dehydrate or smoke? I have a smoker so would love to smoke some this fall and have it for the rest of the year (frozen)
