Smoked meatloaf

My birthday dinner: The wife calls this luau meatloaf. I guess maybe because it has beef and boar, we used a boar shoulder we ground, bacon and pineapple and it’s cooked in a smoker. It’s 2 parts 80-20 chuck to one part wild hog with various spices and a brown sugar glaze then wrapped in bacon, a few pineapple rings then in the smoker for about 3 hrs @ 225 with pecan chips. Not the prettiest thing to come out on a plate, but man is it tasty!! Also mashed taters, slow cooker green beans cooked with fatback and new potatoes and finished with a hunk of carrot cake for dessert.

Yes smoked meatloaf is where it’s at, I really like the sandwiches that can be made the next day. I usually request it from the warden when I leave for a weekend or week long hunt , she makes me about a 5 to 7 lb smoked meatloaf and I take it with. Great food to refuel in the mountains.
