dr. mike that bull was one of or not the renkest bulls i have ever eaten. the wife cooked up steaks and couldn't hardly cut em. asked if it was from the rump and i showed her tha package that was labeled backstraps. cubed all the steaks from here on out.
Hoo, boy; sorry to hear that. I cooked up elk steaks this evening for my wife and myself. Some of the most tender, delectable meat imaginable. Really sorry to hear when meat is rank.
A few years ago I shot a large 5X5 bull right at daylight he was standing in a Canola field & there was not another Elk to be seen. I made the shot and he basically walked 75 or so yards and dropped over.
Unfortunately I had the same problem with the meat everyone told me that it likely was on the verge of spoiling but we had him field dressed within 10 minutes & hanging on our skinning pole skinned & off to the butcher's cooler from when he was shot to the cooler was no more than 90 minutes.
My cousins swears that we did not get the same elk back as the one we took in , we have never taken another animal to that particular butcher and we have never had another problem.
