I like the 120gr BT's out of my Encore, 42.5gr of H4895 seems to be the trick in my gun. I never checked the velocity but I have had one deer go 20 yards after the shot and another was DRT. YMMV

Either the 120 gr or the 140 gr BT wold be great in your 308 Win Encore.
Give the 120 a good look, it is one tough bullet. I have actually tested in in water with a 280AI and I was very surprised how well that bullet held up.
Put that 120 gr BT where it needs to go and a second shot won't be necessary.
