So I have a 6.5 prc that I am sighting in later this week to hopefully use to hunt white tail deer in the Midwest. My target ammo for sighting in is 147 grain and my hunting ammo is 143. Does anyone know if the change in grain is so much that my rifle will be a little off or will it be okay since it is only changing 4 grains?

It is almost for sure to be off some. You should be on paper still at 100 yards though.
You could get lucky and it be unchanged, but I expect it to be off some.
Get a good rest (Front and rear), and check your 100 yard zero.
