I got to scrounging for dinner last night, as the cupboard was bare, and made a unique concoction that was pretty good if I do say so.

1) Oil in pan and fry some mushrooms
2) Add sliced yellow and red bell peppers
3) Add a pack of frozen stir fry vegtables
4) Sprinkle in some crushed red pepper, the hot spicy kind like what you put on pizza
5) Add crunchy peanut butter and let it melt down in the veggies
6) When cooked place entire mix in a bowl
7) Thrown a little more oil in the pan if needed and add scallops and shrimp
8) Before cooking season scallops with brown sugar and honey steak rub
9) Serve

Now we are officially out of food, not really, and have to go to the store, really. :grin:
 
Fascinating, Vince. Were I doing this (and I just may), I would hold the mushrooms until later in the heating process--maybe after the crushed red peppers. Kind of a peanut sauce with seafood. Yeah, that could be very good.
 
My wife will only eat mushrooms if they are well cooked.
I do like the idea of putting them in later though. It was just a hodge podge of what I could find. I really liked the steak rub on the scallops.
 
I hear you. I like my garlic and mushrooms sauteed lightly. To be sure, I want the mushrooms flavoured with the roux, however.
 
Tonight was a catch can deal for me too... very simple.
2 cast iron skillets
in the first skillet I diced 2 sweet red peppers, one large carrot, 1/2 large sweet onion, 1/2 bulb of garlic, dribbled some olive oil in the pan and slowly cooked the ingredients.
in the second skillet I placed 1 pound of ground venison breakfast sausage, cut into about 6 patties, covered the skillet with aluminum foil as I did not have a lid, cooked for 5 minutes, then turned and cooked for another 5 minutes.

Combined the ingredients of the two skillets and added 1 can of red kidney beans
and 1 small can of tomato paste to the mix.

When serving I sprinkled ground jalepino pepper flakes on the mix and it was very tasty. In hind sight, mushrooms would have been a nice addition.. Next time..
 
The simple meals can often be the best. That sounds like it would get in my mouth, though. :grin:
 
I agree sometimes the best meal is one just thrown together on a whim. I think either one of these would hit the spot!!
