Wild Hog Recipes?

I am in need of some wild hog recipes. I have backstraps and the shoulders/hindquarters, and am thinking of trying to smoke the shoulders/hindquarters in my smoker, doing some kind of pulled pork, or...I am not sure. Can anyone share some good recipes for wild hog?

If you can get hold of t-leaves or banana leaves. Just sprinkle with rock salt or Hawaiian Salt if you can get it. Wrap in the leaves and put it in the oven at 250. We like to IMU (In the ground cooking) the pork also, but not recommended during winter. It gets like pulled pork. Then we like to fry up some cut cabbage and adding the shredded pork. Kalua pig and cabbage. Comfort food.
With the smoked pork, fry with sweet onions and at the end add a dollop of jam, not jelly, has to be jam. Gives it glossy and sweet/salty taste. We like to eat it for pupus (snacking) when drinking beer. The more salty pork you eat, the more beer you drink.

Careful Russ you may get a lot of us coming over to Hawaii to get in on one of your in ground pork roasts :) That sounds good.

That definitely sounds like something that would get in my mouth! Good stuff. Course, I may have some problem finding the banana leaves, though with global warming, one can never tell. :mrgreen:
 
HaHa. Well if any of you guys are in this neck of the woods, I will hook you up with one of the local luau shows. They do the Kalua pig very well and the guys are younger. Its hard work and we don't do it much anymore as my buddies and I are old and so tired after we don't get to eat. Well the drinking may have something to do with it also (just a little). The smoked pig is easier and not like pulled pork. More like a semi-dried jerky we call Pipikaula style.

That sounds pretty good Russ. Any pictures of the set up?
 
Never thought of taking pictures of the smoked pig as we to busy eating it :grin: . I will do so on the next batch.
