Bretts smoked fish!

My buddy Brett from college gave me this recipe. Great on stealhead!

2 cans Apple juice concentrate.
1 Cup water
3 Tbls salt
6 Tbls white sugar
6 Tbls brown sugar
2 Tbls pepper (or cajun seasoning)
1/2 Cup soy sauce.

Soak for 24-36 hours. Air dry on rack before smoking. On the last hour of the smoke apply a light coating of honey!

David, the fish are staring to run and I have not forgot your kindness. Some of this will be headed your way hear as soon as I can get a few on the bank.

You're making me hungry. Steelhead makes fine dining and catching them is just plain fun. Best of luck as you fish. This sounds very good. I would think that it would work well with grayling as well.
 
That does sound like a great brine to put them in. Smoked fish are awesome! Ritz crackers and some cheese, and it's a complete meal!
