Oh my goodness! I hadn't cooked a prime rib in over 20 years. We switched from our usual ham or turkey for Christmas dinner to prime rib.

Apparently I did just fine, because it sure smelled delicious as I was cooking, and everyone enjoyed dinner. Mmmmmm. That stuff is GOOD! I liked how Mama could have her more well-cooked slice from the heavily spiced end cut, and the semi-domesticated young men could have their bloody rare pieces from the center cut. Everyone was happy. (y)

Sorry, neglected to take any mouth-watering photos...

You'll just have to take my word for it. Good stuff, and not very hard to cook.

Guy

Sounds like a real hit, Guy. I'm with the younger set on this cut of meat. (y)

We did one last week for an early christmas diner. I have one of those ronco rotissery cookers, works like a champ. Not to mention the world famous Mr Prime beef prime rib rub. My parents have me send some down to them several times a year. Its made right here at Mr Prime beef in anchorage. Not sure whats in the rub but it is the best I have ever tried.

Sounds good guy!

Congratulations Guy.. How long before we see you on the cooking channel?? ;-)

"Roast Beast" for Christmas dinner is entirely appropriate.  Enjoy the left overs. Merry Christmas and happy new year to year to you and yours. Remember "five days without beef makes one weak". :) CL

We had prime rib also Guy! It's a great Christmas dinner. My wife makes her own rub she puts on it. I'll ask her what she uses because it is fantastic!!! Dang is it time for dinner yet?

Excellent Guy.
Prime Rib is one of my favorites. in fact, an end cut med rare is a slice of heaven.

Prime rib with horseradish.
OK, I'm hungry again. Time to head to the fridge. :)

I finished the last three pieces of our PR last evening, along with a couple of pieces of lamb. The ham was all gone the night before.

Man, that was good stuff...

Am contemplating breakfast right now, and dicing up one of those slices of left-over prime rib, into my eggs as they cook sounds real good...

This is what my wife used on our prime rib. She said she does not measure it she just mixes it and rubs the heck out of it and make sure it's covered.

Olive Oil
fresh garlic crushed
salt
pepper
thyme
rosemary

It really gives it a nice flavor.

Alright Guy you are just killing me as Prime Rib is my favourite and on the rare side just makes it a little better.
So I guess my wife will be picking one up tomorrow & will enjoy it with nice fat free gravey some mashed potatoes with fresh carrots & parsnips:)!!!

Blessings,
Dan

Or Dan to help cut out on the fat you can have twice baked potatoes like my wife fixed with cheese on top. Low fat I'm sure!

My mouth is watering again, reading through the responses. I'm going to have to get another prime rib soon...

Living on the gulf coast, shrimp and oysters for Christmas dinner. Three or four oysters in the fryer and one raw, then repeat. Horse radish is good on raw oysters too.

Bruce I just love those San Antonio Bay Oysters. we get them every now and then here in MD from the Baltimore fish market and United Shell fish Co. I went to the Eastern Shore today for a Buffet which had Oysters on it fried, stewed and raw. I ate 5 dozen raw along with a plate of fried and a bowl of stew, snow crab legs and shrimp. (y)

Oysters are terrific!

Truck Driver - that sounds like a great meal. My wife and I used to enjoy some great seafood meals, along with our neighbors when we lived on the Chesapeake Bay. Could chuck a rock from behind my house, right into the waters of the bay. We'd go down to the pier and haul in crab, and eat like royalty, for free. Loved it.

The restaurants in the area all had good seafood, sometimes great. Yum!

Now that's what I'm talking about.
David, your bride knows how to make it right!
